Paprika and Chili Spiced Shrimp with Cilantro-Lime Rice

All Cooking in a Coffee Pot!

 Recipe by Nathan Lippy | Time: 10 minutes | Serves 2

Ingredients:
LimeRiceChiliShrimp

  •  1/2 cup instant rice
  • Juice of one lime
  • 1 tablespoon cilantro leaves, chopped
  • 6 jumbo shrimp, peeled and de-veined, sliced in half lengthwise
  • 1 teaspoon chili powder
  • 1 teaspoon paprika
  • Olive oil
  • Salt and pepper

Directions:

  1. Using a normal household coffee pot, add the rice, lime juice, a bit of oil, salt and pepper to the coffee pot. Pour 1/2 cup of water to brew over the pot of rice and place on the hot plate…just like coffee.
  2. In a mixing bowl add the shrimp and spices with a bit of oil, salt and pepper then mix so the shrimp are coated on all sides.
  3. Once the water has finished brewing over the rice, remove the coffee pot from the hot plate. Sauté the shrimp on the hot plate for 1-2 minutes on each side. If your coffee pot hot plate doesn’t get hot enough to make that awesome “sizzle” sound, use a large sauté pan with a bit of oil over medium-high heat for the same amount of time.
  4. Finally, add chopped cilatntro to the pot of rice and mix with a fork. Put about a cup in the middle of the plate with a few shrimps over the top. Garnish with a few cilantro leave and a wedge of lime.

That’s how you make wickedness in your dorm room!
