Ramen Stir-Fry with Beef and Scallions

How To Recipe: by Nate Lippy | Time: 15 minutes | Serves 4
Ingredients:
- 1 pound inexpensive steak (like eye round or shoulder steak), sliced thin into 4-inch pieces
- ½ bunch scallions, thinly sliced on an angle
- 1 carrot, julienne
- 1 cup button mushrooms, sliced
- 2 packages Ramen noodles, prepared following directions on package
- 1 tablespoon chopped garlic
- ½ tablespoon ground ginger
- A few shakes of soy sauce
- A bit of olive oil
- A touch of sesame oil
- Salt and pepper
- A few wedges of lime
Directions:
- In a large saucepan, add a bit of olive oil over high heat. Add beef and brown on all sides with a bit of salt and pepper.
- Add the scallions, carrots, garlic, mushrooms, and ginger with a few shakes of soy sauce, about a tablespoon of sesame oil and reduce the heat to medium.
- Follow the directions on the Ramen noodle package and cook the noodles whole.
- Once the vegetables have browned and cooked mostly (about 8-10 minutes) add the noodles using tongs and a ½ cup of the liquid and let reduce a bit (about 2 minutes), garnish with a wedge of lime, then serve, steamy hot.
