Ramen Stir-Fry with Beef and Scallions

How To Recipe: by Nate Lippy | Time: 15 minutes | Serves 4

Ingredients:

  • 1 pound inexpensive steak (like eye round or shoulder steak), sliced thin into 4-inch pieces
  • ½  bunch scallions, thinly sliced on an angle
  • 1 carrot, julienne
  • 1 cup button mushrooms, sliced
  • 2 packages Ramen noodles, prepared following directions on package
  • 1 tablespoon chopped garlic
  • ½ tablespoon ground ginger
  • A few shakes of soy sauce
  • A bit of olive oil
  • A touch of sesame oil
  • Salt and pepper
  • A few wedges of lime

Directions:

  1. In a large saucepan, add a bit of olive oil over high heat. Add beef and brown on all sides with a bit of salt and pepper.
  2. Add the scallions, carrots, garlic, mushrooms, and ginger with a few shakes of soy sauce, about a tablespoon of sesame oil and reduce the heat to medium.
  3. Follow the directions on the Ramen noodle package and cook the noodles whole.
  4. Once the vegetables have browned and cooked mostly (about 8-10 minutes) add the noodles using tongs and a ½ cup of the liquid and let reduce a bit (about 2 minutes), garnish with a wedge of lime, then serve, steamy hot.
